Actually, Huisman and her husband wanted to open a boutique hotel on the Floral Riviera in Liguria, but when her husband said, 'Better in about three years', she decided to look elsewhere. Now she has Teds.

E lf hours in the morning at Teds. The back two tables in Frederikstaat 32 are getting increasingly full. With a 'Piscine de Prosecco' in her hand, Sanne Huisman (37) watches the goodies coming out of the kitchen from the comfortable blue bench. "Let's see, what do we have here? A croissant eggs benedict with hollandaise sauce, a breakfast burrito, a chicken katsu, Teds original french toast and banana pancakes 2.0. Well guys, grope away. I'll start with the chicken."

After a bite of the crispy fried chicken with katsu sauce: "Hmm, I was so hungry for that. My father-in-law told me that he had read in the Parool that chicken katsu is a hype in New York and London, but that it was nowhere to be found here in the Netherlands yet. The next day, I told the kitchen. Now it is on the menu in all our cases."


'You can order fries here at nine in the morning'

Huisman, who also runs Teds in Amsterdam, Haarlem and Utrecht, does often eat a hearty sandwich first thing in the morning. "Sure. That's also the success of Teds, here you can order fries at nine o'clock.

It is even encouraged by the ministry. I myself sometimes feel like pushing a pizza into the oven for breakfast." There is real demand for an all-day menu, according to Huisman. "We live in a time where zzp'ers also sometimes want to eat eggs benedict on Mondays. Not everyone has a weekend on Saturday or Sunday."

So at Teds, you eat especially well. Huisman - dressed in black with colourful Nikes on her feet - says she recently received an e-mail from a lady asking about the nutritional value of the French toast and banana pancakes she had eaten at Teds the day before. "After all, she had to count calories for her diet," she says.

We glanced at the pancakes with marshmallows dripping with Nutella and then at the French toast with maple syrup and slices of banana. Huisman, laughing: "Well, I replied, 'Are you sure you want to know? I would just write this day off.' Never heard anything more about it."

Actually, Huisman and her husband wanted to open a boutique hotel on the Floral Riviera in Liguria, but when her husband said, 'Better in about three years', she decided to look elsewhere. Close to her favourite restaurant De Italiaan in Amsterdam, she saw a Thai restaurant for takeover.

French bulldog

In February 2015, she quit her job at Disaronno, three months later was the birth of 'Teds, all day brunch'. Teds, she explains, is named after her now deceased French bulldog.

In every business, he hangs framed on the wall with his still-living brother Frenkie. "When I wrote a business plan, Teds was my working title. I kept it that way. Nice and short and sweet."

Meanwhile, Huisman is already looking forward to a fifth branch, somewhere in Amsterdam's Pijp district. "I am quietly waiting for the right location to present itself," she says. For a year now, she has employed an operations manager and has time to go on long holidays, like the recent one to Thailand. "Great breakfast buffets there. But I'm happy again when I fly back. Can I go to Teds again. My card makes me really happy."
